I have consulted some forums of people with celiac disease, wheat allergy or NGCS (Non-Celiac Sensitivity to Gluten).
In these forums people often talk about halitosis. It is interesting because for them halitosis is not an obsession, nor a discomfort, but only a temporary annoyance that they have when they do not respect the diet.
They comment, even ironically, on the bad breath that they, their children or their wife have had for a few days or weeks.
I think their point of view is very interesting, and also useful, because they are not obsessed with the problem, so they are lucid and rational when they talk about it.
My question specifically concerns two aspects of their stories.
The first: some argue that it took up to two months after a period of consuming gluten to get rid of bad breath.
If this were true, it means that many of us who have tested the gluten-free diet have had insufficient tests, lasted too few days, so they may have gluten sensitivity and not know it.
Second: Many argue that bad breath begins when they stick to the gluten-free diet. They complain that they have bad breath to treat celiac disease. This doesn't make much sense. It should be the exact opposite.
Reading their stories I had the intuition that perhaps we do not yet know everything about these mechanisms.
What do you think, based on your knowledge and experience?
